 90% of all soy grown in the US goes straight to animals, not to humans. Something like 2/3rds of all the farmland in the US is somehow devoted to livestock.
 
Simple fact is, you can feed more people with less land if you raise only veggies (UNLESS you use permaculture, but thats a whole different story)
 
So it takes way more fuel and resources to make animal protien than it does to create vegetable protein. Also, animals shi*t. A lot.  All that shi*t has to go somewhere, and that is another environmental problem by itself. All thgat shi*t also releases methane, which is a greenhouse gas as well, and about 20 times as strong as CO2.
